Chicken will not reach 160 in George Foremanl grill?

I cook just the breast, boneless and skinless chicken on my George Foreman Grill and I use meat thermometer to check if it is done. There is no pink in the center, but when I put the thermometer in the chicken does not go about 135. I know it must be around 160, was so still you can eat ?????
